My dad was a fervent "only eats well done steak" guy. I sort of accepted it as something normal until, ironically, I became a grill chef at a local restaurant. Later I found out it was mostly because growing up, that's what his family did... probably for sanitary reasons.
You're allowed to prefer it, but on a number of objective criteria, well done steak is just less tasty. Let's assume a thick >1.5" piece of meat with nice marbling.
The marbling on the steak represents fat, which is what transfers over flavours and impacts your taste buds. A well done steak implies that most of this fat and other flavour-imparting juices have started to leech out. Texture-wise, these juices are also extremely important to get that melty feeling flowing.
A well-done steak implies that this texture has now started degrading, and fibers started to toughen up. If you do a taste comparison of a steak that's still pink on the inside versus one that is completely cooked through, you'll immediately notice how much more chewing the well cooked steak requires.
Again, you're allowed to enjoy well done steak for whatever subjective reasons you choose. Maybe your mouth, for whatever reasons, does enjoy it more. However, there are also some men that prefer morbidly obese women over normal healthy women. That doesn't mean that obesity is right.
But I challenge you to get two pieces of really thick (~3") filet mignon, and cook one so that the inside is still a nice shade of nearly-red pink, max 95-110*F. Then cook an equally thick one so the inside is cooked through (130 * F+). Cut a few pieces of both and do a blind taste test. Let me know which one is more fun to eat.
