There's a problem just about with every minute of the movie.
Right off the bat, dead bodies in the walls would stink so bad you'd notice it right away and the place would be virtually uninhabitable.
No mission anywhere would storm in through a wall when it's easier just to go through doors and windows.
These enormous errors are within the first 2 minutes of the movie; there are literally dozens more but I think these should suffice, for the sake of brevity.
The guy who wrote Sicario literally Googled stuff and sat on his fat ass writing a 14 year old's fantasy of what the work is like.

As for the first one, it needs to be dryer than the US/Mexico border in order to mummify a corpse. Despite the desert conditions, there is a lot of moisture in the atmosphere—particularly during what's called "Monsoon Season" in the region, where there's rain and flooding.
This is a huge no and does not correlate to real dry places where mummification does occur, such as in areas of Peru.
As for the second, you can literally use this to explain away any err or discrepancy or stupidity in just about any movie that was ever made. It won't do.
