America was a slightly grittier and dirtier place than today during the 70s, 80s, and 90s. And it reflects in the aesthetic of lots of movies from those 30 years.
After 9/11 happened things suddenly changed for some reason.
Different trends in set design. Also I've noted that current films often have really bright, even lighting while older movies have tons of contrast and large cast shadows everywhere.
