Assumably Luke got to the planet with a ship (maybe even his old X Wing). There's no reason he couldn't have brought food with him or gone and gotten some. He could also just be living off the land (in this case more the sea I suppose).
This would be much harder to argue if he was still the weight he was before the movie.
