I think the show is still great, and this season in particular has been very strong, but the shine has gone off it for sure.
The problem is that it feels like the story is over and we're just lazing through the epilogue.
As much as GRRM has tried to shy away from it, the story of the series really was the War of Five Kings and the Starks were the heroes, and that shit ended three seasons ago. Yeah the story has loftier ambitions and aims higher than traditional heroic fantasy but theres a reason traditional storytelling conventions work, they resonate with us. So when you cut out the juicy part of the story it feels empty. You can't just kill off a character like Tywin and expect a story to be as interesting, especially when you're replacing him with Ramsay fucking Snow.

What went wrong? D&D, like most of us, fell in love with the first 3 books. They are amazing and perfectly set-up a time jump and a second trilogy to hash it out.
GRRM forgot comic books are supposed to be fun and although all the young characters desperately needed the 5 year gap, couldn't justify in his head that Cersei and Stannis would do nothing of note for 5 years. And he also couldn't stop over-detailing the minutia of every hohum action his favorites took, and didnt think his audience would be smart enough to piece the 5 year gap together so he trashed his whole plan and had to re-write the entire series without it.
This was a terrible idea and a huge part of the reason why books 4 and 5 are not as good or well-received.
D&D had assumed book 4 was slow because it was half a book with half the characters. They were dumb enough to believe that now that George had started his no-gap rewrite, the final 3 books would come quicky.
When book 5 came out and NOTHING HAPPENED it was aready too late. The show was already underway. They'd have to double up on book 3 and merge 4 and 5 into one season. When book 6 never came, they were left having to make shit up.
In addition, there were questionable decisions in the first two seasons dictated by a lower budget before GoT became a cultural phenomenon. Rather than stand by those choices, D&D have changed their mind mid-stride which makes the show not feel the same.
Those two things combined equal a 5th season that was a total fucking mess. And a 6th season that is more like Walking Dead as every side-character is being eliminated one by one in the most random and ill conceived method ever just to get it done with.
