The book version was based on Ned's drug-induced dreamed recollection. Just because he remembers or dreams about it happening a certain way while he's fucked up on purple drank doesn't mean his recollection from his point of view was historically accurate. The same applies to when he had told his children this story. I'm sure my dad embellished some parts of stories from his younger days, and left some other key parts out.

The whole show they have built Ned Stark up as a paragon of virtue, the most honorable man in the world etc and now they are shattering that to show that he was just as flawed as anyone else. When he was young he was surely arrogant and ambitious, and as an old man he probably was haunted by the shitty things he did to get where he was, just like anyone else would be. He certainly wanted to win that fight by any means necessary, but he was probably haunted by the fact that a fighter that he obviously had great admiration for was stabbed in the back, and that he lived on while this great hero of his died like a bitch.

The fight 7v3 was never about "honor". 3 members of the king's guard are guarding the kidnapped sister of a man whos father and brother just got murdered by an insane king, instead of fighting the rebels?

Nothing to do with honor. Thats what makes ASOIAF so great, its not about that its about not losing aka not getting "blackfyred".

Ned needed to kill them all, so he brought his entourage. Howland Reed probably poisoned them in the books anyways. Its never explicitly stated how that fight went down.

This is the part of this scene that is going right over everyone's head. This is not the scene in the book from Ned's POV. This is Bran presumably looking directly at the events as they really happened, which may deviate from what Ned had told him, or from what Ned himself even remembered or wanted to remember years later. Bran is going to learn that his father lied about what happened.

The second sword that has everyone so butt blasted is going to be significant to the story, and it will be something that Ned is ashamed of and always left out of the stories that he told his children about the war.
