It's almost as if Cap had strategy and the environment on his side plus he'd assessed his abilities from that first encounter, both Falcon and Bucky got blindsided and were mostly concerned with getting away.

In the Ultimate Comics (which the MCU is heavily inspired from, especially Spider-man) the spider that bites Peter was from Oscorp trying to recreate the super soldier serum

Given that Hulk is created from the super soldier serum, Bucky has got some form of it and its been shown hydra sent bucky to get more of the super soldier serum from Stark, this will likely be spidey's origin in the MCU hence why he can fight on par with them. He's basically a more powerful version of Steve and Bucky but without the same level of physical transformation and with more powers

I've never seen anything to suggest this, honestly. His bench is listed at 2000 pounds in The Winter Soldier, but 616 Captain America is probably also around that strong. Remember, the 800 pound lift means lifting the weight over his head completely with his arms totally extended. I can press 175 pounds once, but can also bench press 265 pounds once.

Bucky knew Steve was Captain America because they fucking worked together during the second world war.
Falcon knew Steve was Captain America because Captain America ran a fucking full marathon in like 10 minutes the same morning Falcon did. They also worked together at shield.
Ant Man knew Steve was Captain America because he was recruited to his side - that's not to say that Ant Man knew Captain America's name was Steve Rogers. No, but chances are, if you're recruited to fight for Captain America and you see a 6'2" 250 pound white guy standing in front of you, yes, it's Captain America.

The earlier movies didn't really show how super Cal actually was - he drew some criticism in Avengers 1 for not really being outstanding for someone who's supposed to be a super soldier.

Since then, they've played him up. Winter Soldier showed more of his endurance, running speed, and prowess with his shield, Avengers 2 continued that trend, and now Civil War shows him outrunning cars and pulling fucking helicopters down.
