I'd say the changes for Theon are more with identity than personality. He's still humbled and broken at the end of his arc, but he's no longer Reek. In Dance he goes from not even mentioning the name "Theon" at all in his first chapter to actually having a chapter named "Theon" for his last one. It's powerful shit. His arc is remembering who he is. It's the opposite of Sansa and Arya's arcs which are "learn to be someone else".
I guess while Jaime's was all about changing as a person, Theon's was more about trying to go back to being the person he was in the first place...or even actually thinking about himself as a person.
