Well it made sense in the way that show Roose maybe thought he had Ramsay under control with his loving daddy act, and also it seemed to be a completely unplanned spur of the moment thing that surprised even Ramsay, he seems shocked about what he did. I think he just panicked, with Roose making that comment about Jon being just a bastard, still, and him having baited Ramsay about having a son earlier, and the mad dog comment and then suddenly there's a legit trueborn heir and he's no longer needed. Obviously he killed Walda and the baby to ensure his position, otherwise some of the Bolton household might have supported the legit heir over him, or Roose jr. might have grown up and tried to reclaim his position as the legit heir of Bolton, but now there's absolutely no competition and he's Lord Bolton. He probaby just didn't think far enough about what killing Walda will do the Frey-Bolton alliance, after all Roose kept chastising him about not thinking and not being careful enough - I hope it'll bite him in the ass in the future but assume it won't. It's a bit weird that the Karstark dude don't give no shits about the crazy bastard killing the cool and reliable tactician Lord, his own father, though.

Yes. I still haven't seen new season, but in previous seasons he does pull stunts that shouldn't be possible because Boltons are edgy and GoT is edgy so they must win for the sake of edge.
I think it's not so much problem with Boltons per se, as it is a problem with general tone of the show. It started depicting things going realistically bad and people liked it, but over the course of the show, things are starting getting unrealistically bad.

Possibly. One of my favourite theories is that Roose and Ramsay have Hemachromatosis, and Roose has figured out that draining his blood keeps him healthier whereas Ramsay has not and has mood problems and probably other health concerns due to this. It's common in northern European populations too so it makes sense that one of the palest houses in the books would have it.
