Same reason Terminator 2 still looks way better than Terminator Genisys. Same reason Jurassic Park still looks better than Jurassic World. When you take the time to do things right, make it look convincing, it'll still look convincing in 20 years, 50 years, etc.
If you cut corners, save it all for post-production without detailed plans, pay the animators, take what they give you and say "eh, that's good enough," then it'll look like shit on the day you release it, and it'll look shittier and shittier every year as filmmaking technology improves.
