Books Snakes are approximately five million times better than Show Snakes.
They're each unique with specific skills and personalities rather than just being the same characters with different weapons. They're loyal to Dorne and Doran despite the fact they disagree with him, and after learning he's actually been scheming against everyone the entire time and Oberyn was his weapon they step up and take their father's place. Dorne in general has been slow because the Fat Man dragged it all out rather than just covering it all in DwD, but the Sand Snakes themselves are alright.

Then they and their crew sailed to King's Landing, a harbor which isn't really monitored (pre-modern harbors etc. were controlled at the piers/gates to the city, not at water), boarded the other ship, killed the guy and left.
Harbors, historically, were a dangerous and a lawless area for a reason.
