It's hard to say when the simpsons exactly became shit, but I think everyone who has an opinion on it would roughly tie it to the change in millennium. It's not just the nostalgia of the older episodes, it's the fact that what the simpsons was made to parody doesn't exist anymore.
There's also something about the change to computer animation. The old episodes had such cinematic beauty to them. The backlighting, the warm glow of the colours, the hand painted charm (with all of it's flaws). The angles, oh god the angles. Almost always parodying some movie or other, but surely, that was the point?
And above all, here was a show that was unafraid to show an absolutely shit family who lived in a shit town full of no hopers, but who still absolutely loved each other.
Homer strangles Bart but he really does love him. Bart and Lisa are at each other's throats but they really do love each other. Homer and Marge bicker constantly (often about sadly real things like money) but they love each other and even have a healthy, active sex life.
The Simpsons was meant to parody a TV version of Americana that was already dying out when it came into being. Now it doesn't know what it wants to be anymore, because what it was doesn't exist anymore.

I was watching a few weeks ago and I couldn't believe the amount of cutaways and flashbacks they use now. And its not even flashbacks to the show its flashbacks to whatever is a convenient comedy device to the writers. Its terrible.
The decline in quality is basically tied to them making the Simpsons less of a family with issues, and instead into a cast of zany characters with non-stop celebrity cameos.

Season 1 and 2 are generally a bit bland on the humor and very inconsistent in what regards to artstyle. It was in the 3rd where some episodes really began to shine among other not so brilliant ones.
4th til 9th season is mostly considered classics all around, but even then, the first seasons have some really good bits. Again, my favourite one is actually homer at the bat, which is in a season where most of the episodes arent even that good.

It's funny how the show turned into precisely the kind of shameless self-parody that was foretold by the behind the laughter episode. It's like they knew it was only a matter of time if they kept the show going, and wanted to beat critics to the punch. Although I think the show may have already been losing a little bit of its luster by that episode.

I think the biggest problems with the celebrity cameos is that instead of subtly poking fun and parodying them like they should, they can't do anything. Freaking Lady Gaga was on the show, they gave her magic powers and all they could do is go "LOL SHE WEARS FUNNY CLOTHES" They should've NOT had her on the show, make a parody character of her, and in very subtle and satirical ways knock her stupid attention whoring down a peg.
Hell, forget making a parody of her when you can just have Krusty who is a satire of Hollywood itself, knock everyone down a peg.

The celebrity cameos used to be just that, cameos. The episodes didn't revolve around the celebs, and in the very rare instances where they did, it's because the celebs themselves were voicing a guest character. Like danny devito or jon lovitz. The episodes began to rely more and more on celebrity appearances in the episodes to drive the plot and lost the creativity that made the older episodes so good.
