Pretty sure sith lightsaber crystals are manufactured. Also sith lightsabers are stronger. Unlike the jedis who have to find the crystals or whatever.

Kyber crystals don't have a color until they're chosen by someone.
I would assume someone with a strong connection to the dark side of the force would cause their crystal to become red.

Synthetic red crystals are almost exclusively used by the Sith it makes total sense that the Jedi would avoid looking like Sith in any way, they also make the blade more difficult to handle.
Natural crystals that can be used in lightsabers were monopolized by the Jedi, so they also have no need of synthetic crystals in the first place, natural crystals were mostly shades of blue or green, with smaller quantities in other colors.

Unlike the Jedi sabers, the red Sith sabers were made using synthetic Kaiburr crystals, whereas it was a Jedi right of passage to collect their crystals from the planet Ilum.
Granted none of that actually matters or appears in any of the movies, so basically lightsaber color only serves as a way to visually communicate who is good and who is bad, and sometimes who is good but also in an environment with a lot of blue, so they change the color to green literally as an afterthought.

Red signifies a synthetic crystal. With construction of a non-synthetic lightsaber being a rite of passage for jedi, yes. It is taboo.

Until the new (read: ideas stolen from old canon by unoriginal hacks) canon puts in the effort to fill in the lore that was arbitrarily thrown into the category of Legends, I'll stick with the source that actually provides some information.
The vast majority of in depth information about Star Wars originated with Legends, so when you bleat "muh not canon!" it just seems like you don't want any discussion to happen in the first place. If you don't want to discuss Star Wars, then why even hang around in a Star Wars thread at all?
