Actually, most digital films these days are shot in 2K because that's the max resolution of the Arri Alexa. The Alexa is the most popular digital film camera, I think even more popular than RED

There's a tiny difference between 1080p and I could easily live without it.

I have a 1080p 42inch TV at about 10ft distance and 720 is more than suitable.
4K is for cinemas, not the home. It's overkill.

There's the problem. Youtube throttles the bitrates of the videos for various reasons, most notably when the person watching the video has a connection speed that isn't optimal. You will need to download 4k sources that have properly high bitrates.

Don't buy into 4k films yet dude. Most of the movies that are being released on UHD Blu-ray currently are all upscales because they were edited using a 2k digital master file. We'll get true 4k once studios fucking edit and render their films in 3840x2160

For TVs yes. Because distance and screen size . Computer monitors are another story as you can actually sit 2-3 feets away from one. Also aliasing artifacts of computer generated graphics, vernier acuity is up 10 tens better so to fully suppress aliasing by resolution we need 10 times better resolution than "retina displays" (57 pixels per degree).

I've heard multiple times that 4k is irrelevant to anyone whose TV isn't absurdly large. Most films are projected in cinemas at 2k, which is only slightly larger than 1080p, so I don't see why I would need a 4K TV in my living room.

I think there are likely a number of factors other than resolution which affect picture quality. I have a 60" plasma and uncompressed 1080p material looks fucking tasty on it.
