Because it would take too long to film the fights. Jackie's explained the reason fights in his Hong Kong movies and the fights in his Hollywood movies are so different because in HK he has all the time he needs to do hundreds of takes to nail every stunt correctly. In the US, the studios want movies cranked out quickly.
