Yes I think you definitely should but season 1 is...not to everyone's taste. So you may want to skip some of the first episode of the first season (nothing prevents you from coming back to them later). This guy has a pretty good episode by episode guide so you can now which episode you should skip or not (4chan think my post is spam so I'll do without link, the Youtube's channel name is Passion of the Nerd).
And if you liked it and want more you can also watch Angel which is great and some character go from show to show so you can have the complete picture. And you can use a guide if you want to watch both show concurrently, they're easy to find.

Skipping the first episode is possibly the stupidest thing you could do, that is where the main characters all fucking meet each other. The main plot episodes in Season 1 are all watchable, you can freely skip the filler eps in between though, most of them are worthless.

Watched it all when I was a kid. Tried watching it all 2 years ago and couldn't get myself to go past season 3. There were some really great episodes but most were teen trash, which I think was the target audience or the show, so it's understandable that everybody liked it as a teen.
Definitive rankings:
3 > Angel season 5 > season 5 > 2 > 1 > 4 > 7 > 6
Though season 6 is by far the worst, Tabula Rasa and Once More with Feeling are fantastic

If you liked Buffy you should watch Angel.
I held off on it for a long time since I never liked the character, but he's way better in his own show, mostly due to playing off the supporting cast.
Bear in mind that most of season 1 is monster-of-the-week shlock similar to what Buffy had, so you'll have to stick with it. Also this is a show where pretty much every character gets decent development over time, so if you dislike someone at first they'll probably get better.
