I wasn't a huge fan of either, but Interstellar was far smarter, even despite the stupid ending.
The Martian was dumb. The best thing about the novel was the descriptions of engineering solutions, and those were dumbed down spectacularly. If you read it you'll realise how shit the characters and plot are, particularly what happens back down on Earth. And they chose not to rewrite those elements of the story at all.

If a film has a single interesting, challenging idea, then people will agree and disagree, people will like and dislike it, they'll have something to discuss and argue about. It sparks a dialogue.
If you see a film with a >90% critic score, it usually means the film is competent, well-made and satisfying, but the filmmakers don't really have anything to say. There's no potential for offense in "The Martian" or "Captain America." They're fine. Thus, critical consensus. Everyone agrees "that was okay."
The sweet spot is in the 60-80% range. That's where you'll find real art. Too striking and accomplished to be dismissed outright with a >50%, but too opinionated and bold to allow total universal agreement.
