Where did you get that idea? The eagles in the movies are quite enormous, but in the books they are much smaller, they are like the size of a horse. And even if they were quite potent against them, it isn't a 100% success rate like, for example, when a human decides to kill a bug by steping on it.
The ring is too big a deal to just bet it on a single push attempt without any strategy.

1. The Wise knew that their greatest advantage was the element of surprise. Even Sauron, with all his maligned intelligence wouldn't even consider for a moment that they would attempt to destroy the One. Using the Eagles would negate this advantage, and possibly lead to capture.

When nazguls say they can't die, what they means is that their soul can't leave Middle-Earth because Sauron is holding them back. They are humans souls, no one knows where they are supposed to go, but they do go somewhere that isn't Middle-Earth.
When Eowyn "kills" the Witch King, he doesn't die. His souls return to Mordor, probably in Minas Morgul, and awaits respawning, kinda like your heroes in a warcraft 3 game.
When Sauron was destroyed and thrown into the Void, they probably finally left Middle-Earth in peace.

Originally Minas Tirith wasn't the capital, it was just one city of several. All of Sauron's forts around Mordor and along the mountains were originally part of Gondor, and built by them. The idea was they would keep watch over that accursed land forever, and never let Sauron return to power again. Over a long ass time the kingdom weakened and the old posts were abandoned, and that's when the servants of Sauron moved in.
What was Saurons endgame? What would he do when all of his enemies were defeated and he had dominance over middle earth?
