so like Kaminoans(cloners) made some clones to rebel against the empire when the empire became a thing so they(the cloners) got killed by the empire and so no more clones could be made, and the clones who were already made had an accelerated growth compared to regular humans so were pretty old by the time of ANH

The Republic was bankrupting itself to maintain the clone army. It coasts a lot just to make the clone. Then you have to spent ten years feeding, housing, and training it. Once it finally matures it's accelerated aging makes it useful for only half as long as a normal man.
With the Galaxy under its control the Empire could just call upon shit loads of people and just put them through basic and give them a lousy paycheck.
You could probably field a small army for the cost of make like a platoon of clones.

Mostly because
1. Only Kaminoans knew how to make good clones. Empire tried cloning tubes and other stuff but the clones were just terrible.
2. Kamino tried to rebel as the Empire started shafting them on deals
3. Empire decided it was too risky to keep depending on one supplier for all soldiers so they started recruiting.

Mostly because a traitorous Moff can raise clones loyal to himself and start a civil war. Instead a massive army largely composed of conscripts is as good as the logistic chain that supports it, so any internal rebellion can easily be quelled once they are cutted off from the Empire. Same thing with the Imperial Navy; they have fighters dangerous only in large numbers and massive ships that need equally large facilities for manteinance. They are litterally chained to Palpatine and his Empire.
