Because the director had Dafoe do three versions of the scene. One where he wasn't sure that Bateman killed Paul Allen, another where he knew Patrick Bateman killed Paul Allen and finally one where he didn't know Bateman killed Allen. The director then mashed up the takes into the final version.
This is a really clever use of storytelling and should get more praise imo.

The one really interesting thing about this scene is that they shot this scene doubly, so to speak, and get repeating shots that were then doubly intercut. Then on top of that they got another take, making it a triple scene, in other words a repeating scene, in the same way integers might repeat themselves one after another.

Not sure if you guys know this, but in this particular scene the director of the movie "American Psycho" - starring Christian Bale and Willem Dafoe - in fact shot this scene three separate times, and then intercut various parts of it into one whole in the final edit. The reasoning behind this is as follows: the audience is meant to watch the scene unfold through Patrick's eyes and experience the same paranoia that the protagonist feels in the moment by seemingly changing the Detective's demeanour on a whim. One cut was shot in such a way as to make it seem as though the Detective was fully suspicious of Patrick, and believed that he had in fact killed Paul Allen. The second was meant to convey that he was unsure as to the guilt or innocence of the aforementioned protagonist. The third, logically, was supposed to put forth the illusion that he suspected Bateman not one iota. It really is a fascinating bit of trivia!
