I always imagined Obi-Wan working behind the scenes to protect Luke. He's not just sitting out in the desert doing nothing. Maybe there was danger to Luke like someone found out who is or Vader is looking for his son in the first 10 years of the Empire.
He could even be sent on a Jedi type mission where he has to go protect a holocron/jedi/knowlege/ artifact before the Empire finds it. Maybe he has to go meet up with Yoda to train or something.
There's a ton of stuff that would be just fun to see

I think the real gem is Ewan. He is a great lead. He's proven, hasnt been too typcast post-sw, and deserves another box office/critical success. A good director teaming with Ewan could add a lot to Obi Wans story and the Jedi legacy in general, which all SW fans care about more or less
