Director's cut, most of the time. Very rarely do I prefer the "un-extended" version.

Some directors cuts are done very well, some are terrible.
LotR's DC is godly, The Hobbit's is filled with scenes that should've been in the theatrical, preferably instead of the crappy love triangle or barrel hopping..
Blade Runner's DC is the only one worth considering but Donnie Darko's just shits on the ambiguity of the original.
