Prequels were pretty much shoddily made films with lots of creative potential. But since Lucas' wife left him, and too many people disagreed with him, he fired off most of his cast to filter out his shit ideas.
He wanted to make a movie series completely independently, beyond independent film-making. I don't know if he hired yes-men, or yes-men flocked to him, but all of his ideas were basically approved from the start.
So yes, the prequels are pretty bad movies, but have a lot of creative potential.
TFA kind of went the opposite route and played it safe with character/creative potential of older characters, but had a decent script, decent cast, and decent effects(but thats thanks to time/tech).
While I did enjoy the prequels for their content, and their trying of introducing a new romanticized of the galaxy, it can't be better than TFA in terms of film-making or anything of the matter.

There is no difference video or audio wise between a remux and a full bluray. They have the same bitrate. A remux (usually) will have the main video codec, main English audio track and the subtitles. There won't be any special features, menus, other audio tracks, etc.
I have downloaded remuxes and 1080p encodes that have had commentaries though.
