Like, what is their end goal? What are they trying to accomplish?
you can't say that that palpatine / the empire had an insatiable lust for power, and wanted to control the entire galaxy with the force - in the beginning of ANH tarkin says that the emperor "dismantled" the imperial senate and gave "direct control" to regional governors over their territories. plus he leaves outer rim systems like tatooine alone, despite the fact that he could easily take them by force. was it just to destroy the jedi? it's not like the jedi were the ultimate power - they adhered to the government. but if so, why would anyone join the rebellion? if life is basically the same except the jedi aren't cops anymore, why make a big fuss?
this is somewhat shown in the movie, with the rebel alliance being a dinky operation for the most part, but they aren't fighting to revive the jedi - fuck, i bet only our heroes know about the jedi (which is implied in TFA).
so what was their plan? were the prequels/trade federation a desperate attempt to explain the empire's motives?
why doesn't anything in this franchise make any fucking sense?

Well at least the planet thing doesn't really count since it occurs in response to the rebellion. It's not the inciting incident that caused the rebellion to be formed.

The Empires goal was peace and order. Something that was clearly uncertain under the corrupt and incapable republic.
Sheev realised the only way to achieve this was by taking direct control, removing the inefficient bureaucracy that was the republic, and inserting his trusted Moffs and governors in their place.
Since the Jedi are idealists they would never support this and needed to be removed

jedis aren't idealists, the sith are - hence count dooku being a "political idealist".
finally, the sith don't believe in peace. the first line of the code of the sith is "Peace is a lie, there is only passion."

This. Sheev had prophetic Force visions of horrible grimdark edgemasters from another galaxy coming to fuck shit up and he realized that he had to unite as much of the galaxy as he could to fight them, and it would have worked if the Skywalkers werent a bunch of retards.
