After season 4. The last season is just... JUST.
The writing went downhill after season 3. It was never unwatchable, but it came pretty close sometimes.

In all seriousness, season 3 gets a bit out of hand at the tail end, but watch 1, 2 and 3 in full.
4 has a couple decent episodes but watching the whole season is too weird (only one with Dan Harmon not in control) so I would skip straight to 5 and 6.
I think Dan's return made 5 and 6 pretty different in tone but honestly I like them both a lot, they're not just more of exactly seasons 1 or 2, and not the supermeta 3.
