He never got along with the jedi order.
The jedi were a militant order trained to fight and kill so leaving any younglings alive would mean they will come back to kill him at a later point.
In the new Empire there simply wasn't any place for them so killing them could also be an act of mercy (from Anakin's perspective) since they'd get hunted down. A mercy kill by his own hand might be preferable to a shitty life on the run only to be gunned down later on (since Anakin saw their demise as inevitable).
The power rush from becoming a Sith and going wild with his new power level clouded his judgment.
It was necessary to kill them in order to save Padme since Palpatine gave him no choice.
Lingering resentment from never really being a part of the younglings since he was introduced into the jedi order at an older age and always an outsider.
Probably all of the above.
The key to Anakin's salvation is his own family.
After losing Padme and brooding over it for decades he had a chance to redeem himself by saving Luke. He would never do that for anyone else.

Here's how the new canon works:
The six films of the saga are canon, as is Star Wars: The Clone Wars (both the movie and the TV show). Nothing else released prior to April 2014 is canon. Films and TV shows released after that are canon.
Short stories released in Star Wars Insider from April 2014 onward are canon.
Novels released from September 2014 onward are canon, novels released before then are Legends.
Comic books released from January 2015 onward are canon, comics released before then are Legends. The lone exception is Darth Maul: Son of Dathomir, which is considered part of Star Wars: The Clone Wars because it is based on scripts from seasons that weren't finished.
Video games are in a murky position. Games released after April 2014 are canon, but none of them really have defined stories yet, so it's not clear what effect they really have on the canon other than introducing tech and characters. If we get a game with a real story, that might change.
The Old Republic is Legends, and is the only Legends material still in production.

It's all still in print with the Legends label marking it as non-canon, because Disney likes money.
It's also considered fair game for writers to draw elements and characters and ideas from. So, for instance, Darth Revan or HK-47 could come back and be canon again, but KOTOR itself would still be non-canon.

Originally, it pretty much was sanctioned fanfiction. Some writers wanted to continue the story in books, Lucas would never say no to free money, and everyone won.
The water was muddied when it became more than just lucas saying " 'k", but it was still essentially fanfiction until stated otherwise, and never really taken as canon in the first place outside of autists.

Before Disney, there was a canon hierarchy. The idea was to keep having more Star Wars story content even though there weren't any new movies coming out. Everything from a certain tier upwards was canon, but if two works contradicted each other, the higher tier work superseded the lower tier one.
The tier system worked as follows:
G (George) tier -- The six movies of the saga.
T (Television) tier -- Star Wars: The Clone Wars. This tier was also supposed to include any future TV works, but none happened.
C (Canon) tier -- Most EU works. Conflicts between them would usually be resolved via an official retcon or other adjudication. Or, in some cases, just ignored.
S (Secondary) tier -- A holding cell for stuff that predates any effort to maintain a solid continuity. Stuff here would either be drafted into C tier through later references, or solidly contradicted and shoved down to...
N (Non-canon) tier -- Stuff that's been firmly shoved out of canon or was never supposed to be canon to begin with. Includes "what-if" stories and other stuff like that.
Lucas Licensing targeted its releases based on assumptions about the audience's familiarity with the canon. You're going to write something meant for people who've only seen the movies quite differently from how you'd write something for people who are familiar with the movies and the EU together.
