The movie is an adaptation of a script written for a stageplay. Domergue's Got a Secret would have been spoken by a Narrator before the next scene. Knowing thatthe coffee is poisoned, and that it was poisoned by someone in the room,is absolutely essential for the tension in the following scene.
The Hateful Eight doesn't play out like most Westerns. It's a weird, half-born thing. I deeply enjoyed the film, but I absolutely see why a number of anons didn't. It broke far too many conventions and, at the same time, was too familiar. The point of the film is all about that tension that builds and builds. From the moment you sit down, you know that one of those no good sons of bitches is a bigger asshole than the rest. It plays on that.
Tarantino films are like fusion cuisine. He plays off of every genre he covers, mixing it with 70's grandiosity and exploitation. It's almost always weird and fun for cinemafiles but it's rarely perfect.

Not to go to argue over stylistic choice(especially considering that the movie is an adaption of a stageplay), but showing someone poisoning the coffee without revealing WHO has done it, would be very difficult for the scene.
The movie/play is about ratcheting up the tension between all the characters. By the time we get to that chapter, we've likely decided in our heads who the secret bad guy is(right or wrong). We've begun to suspect at least one of the characters. By distracting us with the previous scene involving a black man's dingus, it provides the opportunity for us to miss details. Having the camera focus in on the coffee while some "unknown hand" poisons it won't work in a play, and if done here, it destroys the tension built during the black dingus story by distracting the audience. The dingus is unsettling for a reason, and the faux-calm that follows is there for a reason. We're supposed to relax after a climactic scene like the shooting of the old confederate general, and we're expecting to relax for a moment when the chapter ends. But we're denied that by being given the knowledge thatthe coffee's been poisoned and several characters might drink it.During the song we KNOW the bad thing HAS happened and we're waiting for the consequences. When they come, their so...bad it serves as another climax that is in itself fucking unsettling.

The Hateful Eight is what happens when Tarantino gets too self-indulgent. It so happens that the Academy doesn't like Tarantino enough to enjoy his personality showing through in a film, but many people do.
Just think about it, Pulp Fiction, Kill Bill, Inglorious Basterds were really story-driven, you wanted to know how that clusterfuck would resolve itself. The Hateful Eight is character and style-driven because the story in itself isn't that surprising. Instead, as soon as the first four characters meet in the wagon you know shit is gonna happen and the tension keeps you going, using nigger liberally and the cynicism of the characters makes it interesting.
When I was watching it I was thinking simultaneously "wow this is really long and drawn out, I don't know if it works so well" and then dingus and shit started coming down. I left feeling like it all meant something. I really fucking love it, one of his best work.
