In episodes 5 and 6 they got the real guy. He was busy during the filming of episode 1 so they had to use a puppet, which is why it looks so shitty.

In episodes 2 and 3 he was too old to do all the action scenes they wanted, so they just had him as a stand in for the cgi version you'd see in the finished movies.

That's really the biggest problem of the prequels; they were just too ugly. I'd have overlooked most of the story problems if Lucas just made movies that didn't look worse than in the fucking 70s.

What's the point in making all these practical sets if they are just going to jizz cgi all over them in post-production so they all look like cgi anyway?

There are ways to use practical sets properly, the prequels are not a good example of that. Something like Lord of the Rings is.
