If i wanted to go up higher in quality, what average size should I jump up to?
I dont want to be having movies that are 4+GB each (as mentioned space is foremost)

2.4GB x264 will give you a ~4/5 subjective rating at that resolution
It takes a lot more to get it to 4.5/5 ('transparent'). For that resolution, 3.5GB x264 is about transparent, though of course the limit is much higher.

It is your setup not your downloads this can happen even with bluray discs and shit. I'm not debugging your entire setup for you but a quick and easy fix for it is to set your audio "normalizer" so that it fixes this problem. This is a shitty way to fix it, but you don't have to fiddle with your hardware settings or buy a proper audio system which would properly read the shit you're downloading and play it properly. In MPC-HC it is under Play>Audio>Options>Internal Filter>Audio Switcher>Normalize and set to to something like 400%
