We saw him fly through the city chasing down a bounty hunter and maneuvering at break neck speeds through traffic in Episode II.
There's a surprising lack of dogfights in Star Wars. I'm pretty sure the lightsaber battles have had more screen time

Ok I will. Coruscant was terrible as the series main location. Everyone there is talking up the war, but everything of interest as far as actual warfare goes is happening off in space and on other planets. Coruscant is an impossibly large city the size of a planet, and yet we barely see anything but a senate room the Jedi Temple, and all we ever really get to see of the Jedi Temple is the council room where Jedi sit and make terrible decisions that constantly lead to more war and death.

The battle of Endor is the best fleet action ever put on screen. In the Pirkinning is a close second. Oddly enough Nemesis has an excellent space battle right up on the "Ramming speed" stupidity and the best two-ship battle is still from The Wrath of Khan.
