Why doesn't anybody make great Westerns anymore?
The last great one was Unforgiven, over 20 years ago.
I know it's not old enough for your non-mainstream tastes, but Django Unchained is fantastic.

It's good you liked it, but some people don't. Not because of the race stuff but because taste is subjective anon, and that's ok. Django as a character felt really thin, not much there. Waltz's character too was a little too much...Waltz, a lesser Landa with his idiosyncrasies. The pacing was strangely off in a number of places, most glaringly the QT cameo. There was surprisingly little heart in the journey to Broomhilda, which would have helped. Jackie and the Bride's stories were more endearingly told. Leo was great, felt like alive. The hip hop on the soundtrack was out of place too.

Fun? A little. But it's far grittier than Unforgiven. Also things actually happen in Tombstone, like shootouts, manhunts, character development. And it's a true story.
What happens in Unforgiven again? Oh yeah, Gene Hackman builds a shitty house for half of it and Clint Eastwood is getting too old for this shit in the other half.
People like the IDEA of Unforgiven, but it's very poorly executed.
3:10 to Yuma and True Grit were alright. You can't really come up with a great western setpiece anymore because most of it will feel too cliché and what doesn't feel cliché will seem like you're deliberately going out of your way to avoid a trope.

You're right about Django vs the Bride though, she is a lot more endearing and interesting as a character. I still feel it is a good western.
