According to the EU the crystal decides the color. I don't think the movies ever officially gave an answer what dictates the color. However Luke was originally supposed to have a blue lightsaber in Jedi, but ILM realized that because of the Tatooine sky was blue, the lightsaber wasn't visible in the outdoor shots against the blue sky in the background. So they changed it to green so that it would be more visible. Also there is a deleted, short scene from ROTJ which shows Luke assembling his lightsaber and igniting it. If you don't believe me about ILM changing the color of the lightsaber from blue to green, just watch early teasers for Return of the Jedi where it is still blue.

But in the EU he did use the dark side a bit in his fighting style (this has nothing to do with the color of his lightsaber, that chart the other anon posted is pure horseshit). He used a fighting style called Vapaad, which takes extreme skill to master as a Jedi since you sort of use controlled rage. You could fall to the dark side if you're not careful.
Please note he held his own against the emperor because he used the dark side too. I say held his own because i refuse to believe sheev could be defeated like that, he wanted to be defeated so Anakin would see him in pain and turn.

They could, and sometimes did during war time, but Jedi did not typically carry blasters for the same reason they didn't use armor: They didn't consider themselves warriors and they felt by arming themselves like warriors they would fall into that role. The lightsaber is a woefully inefficient weapon for fighting a war, the Jedi would be much more lethal with blasters. Imagine someone who can see the future with a sniper rifle.
Luke actually used one in the EU novels, he headshot like 50 alien noobz before it ran out of charge.

Like others have stated, it was originally supposed to be just Red and Blue - Evil and Good. A visual representation of Lucas's Black and White morality that the films were supposed to convey.
It wasn't until RotJ with contrast issues that ILM changed the color of the Luke's Saber to Green. Then it was Red, Blue and Green for the next 20-ish years.
Then the EU (mainly the games) decided: "why the fuck not?" and added every color of the rainbow.
KotORFags will claim that Jedi Classes are still a thing (Guardian, Counselor, Sentinel etc.) but those are also non-canon.

1. Lightsabers are just fucking laser baseball bats. They clobber each other for no reason with shallow blows when they could just kill each other. There is no reason Finn survived other than plot armor.
2. Rey going into 'FORCE CENTER BALANCE' mode and suddenly kicking ass. The fight, movie and character would have been IMMENSELY more believable if they got into the saber lock, having just seen what Finn had happen to his shoulder during a lock, saw the vent coming towards her arm.
We get a shot of her face and she's terrified, her face basked in the light blue of her saber. Then as the blade comes closer and closer we start to see her blade gradually shoved aside and Ren's covers her face in a red glow, her fear turns to rage and she kicks his ass.
Then we see her remorseful at the end, and that weird imploring look she gives to Luke makes more sense. We could see her being afraid of what she could become, like Luke was on Dagobah. It would instantly give her much of the depth and believability that she lacked and would allow her to cast off the Mary Sue meme. But nope, too complex of a story for Disney, can't have our newest princess having any character flaws or weaknesses!

Basically the entirety of RotJ was about Luke coming closer to the dark side, just as Yoda said would happen if he left Dagobah before completing his training, which is why the Emperor is able to tempt him so much. But when he sees the hand of Vader and realizes his vision of "becoming his father" is coming true, he is able to reject the dark side completely, thus essentially fulfilling his development arc. It's really nice, and is the only really good element of RotJ, and it definitely needs more credit.
Though, it's often lost on many people now, who think the only change in Luke between 5 and 6 was that he got "more badass".

The fact that Yoda, as well as Sheev, even had LS at all, much less used them, basically devalued a lot of the message both characters conveyed in Empire and Return. It was just a decision designed to sell toys.

It's basically all a coincidence that things turned out this way since SLJ just wanted a purple lightsaber, but his character ended up being really unique in that despite being a Jedi, certain aspects of his character are not unlike the Sith. His fighting style is even vaapad, which is an aggressive style favored by Dark Side users. It's pretty interesting actually.

Also if you'd noticed, he's like one of the angriest Jedi throughout the PT, to the point where you get the feeling that he's constantly restraining his anger. Dude's just REALLY good at controlling his emotions. He's basically an emotional Jedi who, unlike the Sith, is able to keep his emotions in check and use his anger in a more positive manner. He's basically the closest you could be to a Sith while still remaining a Jedi.
There have been heaps of reasons across the various canons.
In most of the Old Republic stuff (thousands of years ago), green is for those who primarily value wisdom, blue is for those who primarily study combat, and yellow was for those who strive to find a balance - jack-of-all-trades, master of none. As far as the bullshit with cyan, viridian, orange and all that crap, I've always just considered them different shades of those three colours - the way you can have dozens of green emeralds of different colours being the same as different lightsaber crystals, if that makes sense.
In the Republic years (up to and including the prequels), Jedi would get generally build their crystals in the caves of Ilum, where only green and blue crystals grew. By this time so many exceptions had been made to the original rules that it was pretty much just personal preference.
After the Galactic Civil War (the OT), Ilum was long-gone, having been destroyed by the Empire. The New Jedi Order would use whatever crystals they could find, resulting in any colour being used - green, blue, purple, yellow, even red.
The Sith have always used red lightsabers because they use synthetic crystals rather than naturally occurring ones.
Obviously there are notable exceptions to all of these explanations. Mace Windu was given a purple crystal after nearly killing and then saving an alien's life. Adi Galia and Plo Koon use a red and a yellow lightsaber, respectively, in the EU, but then both use blue in the films. Dark Jedi (not Sith) frequently use their old lightsabers or even new ones of various colours, not necessarily red.
As far as the real-world explanations go, blue is good and red is bad. Luke gets a green one in RotJ because the blue looked crap against the blue sky, and Mace got a purple one in AotC because Samuel L. Jackson wanted a purple one.
