Let's see, for an adventure, the pacing is mostly off, with lots of periods where nothing happens, and even the action scenes are nothing special. The plot also seems fairly contrived. Say, since this is the final battle between good and evil and all that, the emperor's preparations seem fairly rushed. Fans seem to have difficulty accepting that A New Hope and A New Hope: Special Edition are entirely different films. They have the same name, but that's fooling you.
As a basic example of what I mean, nobody looks at The Thing 1982 and complains that they colorized it and erased all the original actors. Everyone is aware that it's an entirely different film with the same name. The Special Editions are really no different. They are remakes that incorporate old footage.
This is the necessary shift in perspective, as it breaks the unending cycle of "Han shot second, but he's supposed to shoot first, but Han shot second..." - insanity. The correct response is to say of course he shoots different; it's not the same movie.
Furthermore, the existence of two versions leads to an impossible third version, as with F. Scott Firzgerald's two versions of Tender Is The Night. In other words, Lucas' true success with the Special Editions was not the creation of an 'improved' version of the films but, rather, to create multiple competing failed versions - ultimately making the statement that the rebellion itself had failed. Something went wrong even in the original Star Wars, and this problem has still not been addressed.
This was, of course, the basic impetus for the creation of the prequels: there was something wrong with the Star Wars. Even die-hard fans misunderstood the original films - and, then, didn't realize their ideology was being satirized in the prequels. It got so bad that Lucas ultimately decided that the only possible victory at this point would be pyrrhic.
If you can't take the capitalism out of Star Wars, why not just sell the whole thing to Disney?

There is literally no such thing as the original cut of the movie. The only way to recreate seeing it would be to be in a theater in 1977. Even a change like "cleaning up the film" for a Blu Ray release would make it a completely different film. Putting it on Blu Ray at all makes it a new film because it's no longer being projected through a 70s film projector.
Of course a Blu-Ray is different from a VHS, and is different from a theatrical release (not to mention radio plays, novelizations, etc.). They're different media. They have similar content, but the medium is the message - which is why the restoration edits exist.
In the case of the Special Editions, they are very different. The Special Editions are 1990s remixes with Jurassic Park CGI. They are 1990s films that reflect trends and attitudes from that period. Terminator 2 and remix albums were huge.
Also, we should note that the changes in the Special Editions are split between the 'tasteful' and the blatantly vulgar. Nobody nobody cares that the matte paintings were replaced, or that the X-Wing were CGI. Fans just want Han to shoot first so that they, like you, can go back to not caring that things are different - not being aware that things are different. So much for "the historical legacy for our children", or whatever.
