This is the same Dooku who wanted to save the Republic from its own corruption by helping a Sith lord mastermind a gigantic red herring secession war in which said Sith lord was the leader of both sides. Dooku also became a Sith himself for basically no reason and was taken by complete surprise when his master proceeded with the next logical step of his plan. Dooku, like any self-respecting Sith harboured a plot to overthrow Palpatine with his droid army. He confesses this to Obi Wan in Ep. 2.
He doesn't realise that Palpatine is simply using him like a pawn, nor does he know about Anakin's destiny to become a sith. If he did, given the rule of 2, he would then sense his life in danger, but he still thinks that Palpatine will keep him as his apprentice if they succeed.
As for Grievous, I don't know why you care. He is a minor character, just another distraction Palpatine uses to justify continuing the war against the trade federation, bringing him closer to becoming emperor.

Yeah sure whatever. The point is that in the context of the films Dooku is largely constructed as a throwaway bad guy. He has no setup in Ep. I, his backstory in Ep. II is "Count Dooku was once a jedi" and his motivations are not at all clear. He is quickly disposed of in Ep. III in order to make room for Anakin and that is really all we get from him.
In the clone wars he is actually depicted as a pretty nasty and extremely intelligent and deadly adversary and essentially wages a one-man war against the Jedi and by most metrics wins until Palpatine needs to spring his trap and sweep the separatist movement away. However none of this is ever given to us in the movies because the script doesn't have the time or the focus to really fit in him. The movie going audience generally considers Dooku to be a joke, Lucas purposefully naked "Dooku" after "DooDoo" because he thought it would be funny ( How Star Wars Conquered the Universe ) and the fact that the novelization has more to say is more sad than anything because it shows wasted potential.

Luke showed his rise to Jedi by both improving his skill with a saber, and also his mastery of the force. It's a perfect growth arc.
