The movies don't focus on details that much, but in Clone Wars, Rebels, and vidya the armor obviously can tank a few hits depending on the situation.
We've also seen droids take multiple hits before being rekt.

Storm Troopers are chickenshits but clever chickenshits. For DECADES Troopers have been defecting from the Empire after seeing the morally questionable things they're asked to do. So when ever a conflict arises they open fire slightly off of their target and don't take cover just waiting to be hit. When they get hit they just fall and play dead. Once everyone is gone or their body has been dragged somewhere they get up take off the armor and start a new life. FINN is the only DUMBASS in Imperial history to wait till he gets back to base and stage a daring breakout by stealing a Tie Fighter.

THEY GET SHOT BUT IT DOESN'T ALWAYS KILL THEM. SOMETIMES, IT JUST KNOCKS THEM OUT THANKS TO THE ARMOR.
IF YOU HAVE ARMOR AND YOU'RE ALWAYS GETTING SHOT AT BECAUSE OF YOUR JOB AND THE ARMOR CAN MAKE YOU JUST GET KNOCKED OUT INSTEAD OF DEAD, YOU WILL WEAR THE ARMOR.

Gas mask filters typically only filter out a limited number of gasses.
What would be is if they were rebreathers with built-in oxygen generators. That way they could work in all environments including fires and space which would be extremely beneficial for soldiers based on star ships.

Armor isn't and end-all protection. It's meant to minimize damage, not mitigate it completely. Bullet resistant vests may save you from dying, but you'll still suffer broken ribs and a possible entrance wound.
