It's a good scene.
The buildup to both men being too proud to lose, Schultz accepting it for the good of his friends, Candy tries to rub it in, Schultz shows that pride can overcome even the most intelligent men, ends in them both dying. Sets up final act with a bang.

because Schultz hated slavery and hated slavers.
He almost broke character while going to Candie's home when they were going to kill D'Artangan. You could see his rage building when he is forced to pay that $12 thousand for Broomhilda and he thinks back to D'Artangan being ripped apart by dogs. But still he kept it inside and tried to accept his loss and kept trying to leave but Candie kept pushing him and rubbing his victory in his face and that broke the final straw.
You can also think way back to the early part of the film where Schultz makes an agreement with Django to help each other and shook hands. It was about fairness.
