I admit it is sloppy, but they have to do something. For one, having Rey defeat Ren in the first movie is pretty tough to come back from. The stakes there are pretty low and it's obvious Ren will return to the light. Given both his inferiority complex and his leanings towards the light, combined with Rey defeating him in the first film, the best way to bring stakes back to their rivalry is for the audience to be rooting for Ren against her since she is painted as a prodigy.
They also have a big card up their sleeve with Luke being her father and abandoning her on Jaku. It's clear how much that hurt her and it's the only thing that could conceivably turn her against Luke.
Given that Rey has more potential than Kylo, it's obvious that Snoke will desire her over him, which will cast him out. If Luke saves his life, despite all he's done to hurt Luke, that is the best possible way for him to come back to the light.
But to rephrase what I said, I'd love for them to do something totally unexpected. But given what we have this is how I see it going.

Massive feats of telekinesis made to look effortless. Could be very large-scale or very complex, or both. I like the idea of him disassembling one of those little rock buildings, levitating all the individual bricks in the air, then calmly putting them back together. For Maximum Poetry they might just have him levitate the Falcon.
As far as his lightsaber action goes, he doesn't need to do much. Any swordfighting he does should be deliberate and refined, like Vader's dueling in ESB. Considering Luke only really learned how to fight through mimicking Vader, I think it makes sense for him to have a similar style as an old man. Hamill can definitely pull of that level of action, I think.
But I hope he uses all of his power very seldomly. Even just once would be fine. Gotta build it up so when that green saber flasheshe'd better still have his green oneeverybody knows it's on.

Kylo will absolutely 100% go back to the light side by Episode IX. He sucks at using the dark side. When he's calm during the first half of the movie he's really effective. Once he tries to "use his rage" or whatever he gets beat.
