this, helmets have had these for centuries. it's to provide extra protection from blows to the head as if from a rapier or something similar. Totally pointless when lightsabers can cut through them like they're nothing.

Back in the days when there were cavalry charges most men on horseback had rapiers and the head had to be protected. In essence it protects the top of the head from being hit with rifles or clubs or whatever was being used in hand to hand combat, not just rapiers.
