The novelisation certainly filled in a few gaps, but it's based off an earlier version of the screenplay, if I remember correctly. JJ Abrams didn't know about it until very late apparently.
I'm certain Maz's scenes are cut after her castle scenes. We definitely see Leia taking the lightsabre in one of the trailers, and it wasn't in the final cut.
I'd guess that Poe's escape was probably filmed, but cut, I doubt they'd leave that open without covering it - only to cut it later. His experience on Jakku could've taken up at least 20 mins of the movie. No idea of Oscar Issac was in Abu Dhabi for that long to film it though.
The woman we see in the Republic capital before its destruction was Leia's emissary, her scenes were cut too, we can see her in the visual dictionary.
When Rey and Poe meet, she remarks that she liked his face or something, it looks like they're trying to set up some bs love triangle in the novels, but her feelings for Finn in the film are up in the air.

The scene had a lot of issues, but it's not much of a jump to conclude that destroying the capital system of the Republic along with its fleet would completely cripple it. The planet destroyed held the entire apparatus of government, and with the fleet destroyed, it meant it ceased to function. If Coruscant was destroyed the same way in the OT, the galaxy would descend into complete madness, the Republic wouldn't simply move capital and start over.

One of the canon books mentions this process. The first chancellor was Mon Mothma, who was a leader of the Alliance. She seemed to get rid of Chancellor Palpatine's emergency powers and reduce the size of the military. Instead, defence would be left to individual members.
