I didn't like the CGI for this ayylien. I can appreciate the expressiveness of the creature, but I feel that makeup and prosthetics would have been more effective.
They should have made Lupita Obongobongo into a crusty old Twilek with the same space-Caribbean accent. The costuming could have completed the old, crusty, yet grandmotherly look.

Also, there are bound to be differences between beings of the same race. Yaddle was basically an unused Yoda puppet, which turned out to the be second Yoda race character ever revealed in all of Star Wars, even the EU.
Maz is clearly being setup as a sort of teacher character with a connection to the past. For not being force sensitive, she can clearly sense when others are experience visions. Remember that our initial introduction to Yoda was that of some annoying alien on a lonely world and that him being a Jedi Master was probably the last thing in our minds.
