What practical use would a normal person have with a lightsaber besides being a really efficient lumber jack?

If I wanted to keep a weapon on me and I could casually choose between a lightsaber and a blaster, I would choose the blaster.

Lightsabers are cool and super deadly when used right, but only those who have trained in the ways of the force could ever have a hope of using it efficiently. Only those with force training could deflect blaster shots reliably and prevent self harm with the weightless blade.

Also, i always thought that only the more skilled force users could create lightsabers to begin with, hence why not just anyone can have one.

The weighting of a weapon is part of its balance, and a well balanced weapon is intuitive to use because of your natural understanding of physics and the forces you impart on objects. A sword with a weightless blade is about as unintuitive as it gets, and it also affects your ability to track the object in relation to yourself. Then Kylo stops playing and disarms/paralyzing him immediately. I wasn't making a light comparison to Empire, that's exactly how that duel ends. Luke gets his hit on Vader's shoulder, Luke takes cover behind those little tower things, Vader cuts those down, Luke gets his hand chopped off. Are you saying that scene shows Luke being good enough to really fend off Vader? Do you think Luke was even close to Vader's level? That fight lasts more than 8 times longer than Finn did against Kylo. Finn did not last even a literal minute.

One of the things that really seals the Kylo playing around with Finn thing is Kylo lets him get up.

Even after getting shot in the hip by a bowcaster, which they spent an entire battle scene emphasizing how powerful it was, he was toying with Finn when they had their lightsaber fight going so far as to torture him when he stuck the cross guard into his shoulder. It was only after Finn got that lucky slash in that Ren got serious, almost immediately disarmed Finn, and incapacitated him. When he went against Rey, who was also Force sensitive, did the crippling effects of his wounds become apparent.

Finn is force-sensitive. In fact anybody that can handle a lightsaber in an actual fight with any degree of skill whatosever is. You have to be, or you'll cut your own limb off. They clearly implied Finn is force-sensitive in the movie at several different points.
