They modified the film frame by frame to add in the color effects, by hand yes. Photo editing has been a thing ever before digital media, but it was a much longer and more difficult process.

In IV, they were rotating rods with reflective tape. Set lights made them glow, and they added the color in post by inking over the physical film frames. For V and VI they stopped bothering with the rotating rods, since they were so fragile, and just did all the rotoscoping in post.
That's another part of the reason the IV fight is so slow. The rods were so fragile that they kept breaking, so the duel couldn't really have any hard hits

There is no "spreading of the force", A sith master is generations of knowledge passed downed, being honed over a millennia. When there was mass amounts of trainees, people fighting over power, it wasn't as focused or centralized. By eliminating all the sith, Darth Bane was able to take complete control of the sith order and unleash true power.
Think of it this way, taking the bureaucratic government and getting rid of everyone, turning it into a one man dictator ship. Shit gets done. Also the jedi are arrogant, this made them weak. You also ignore the fact the Jedi were more peaceful, thus not in practice as much. Sitting around meditating does not make you more powerful. The reason the Jedi and Sith in knights of the old republic were so strong, literally fighting every fucking day. There were battle meditations for a whole fucking fleet. It actually works really great, one man took complete control of the galxay and eliminated almost all sith. Even after he was dethroned in episode 6, he came back even more powerful. Also the Empire continues to rule and dominate the galaxy through out the history of Star Wars. The sith rule for some time, the Jedi rule for some time.
