He could have started as disfigured, imagine Obi-wan finds a little salve boy with only one arm, and is good with the force, but of course already has anexity with his disability.
As the movies move on he gets more and more disfigured in the war.
They could have played on his struggle with the dark side, as he sees himself less and less human, etc. Like when in ep.6 Luke looks at his robot hand and realises he could easily become like Vader.
I was so disappointed when I found out he was a crusty old white guy.

What? His age was never stated in the original trilogy. He could be assumed to be around the same age as Obi-Wan. Alec Guinness was 69 when Return of the Jedi released.
There was no prophecy. Anakin was legit a great Jedi warrior. He decided his mission was to bring balance to the force, meaning ending the schism between the dark and light side, unite them into a single front. The force is a preternatural force, this "good vs evil" is an entirely human dichotomy. Obi Wan saw past that shit and wanted the Jedis to join the Sith amicably. Because the people in power have to keep up the pretend of a "us vs them" struggle, they said no. Emperor took advantage of Anakin's frail mental state to manipulate him into the dark side.

We know Anakin is around 11 in episode 1 while Obi-Wan seems 17-22 at the time. By Episode II, Anakin has to be something like 19-21. Episode III has got to be only a few years after that. And Luke was born in RotS and was exactly 19 in A New Hope. Vader is like 45 at most.
