He's the only remaining Jedi in Return of the Jedi, and he's also older and more experienced. It's implied that in the time gap between The Empire Strikes back and Return of the Jedi he improved his skills with the force.
Luke really isn't a Mary Sue at all. He has his moments, sure, but he spends a lot of time getting his ass whooped, struggling, or relying on his friends (who initially weren't too fond of him) to help him
Rey instantly knows how to mind probe people, mind trick people, wield a lightsaber and is better at using the force than Kylo, who presumably trained with Luke for years, because movie. Luke in the first movie only aimed a torpedo, and that was with Obi Wan guiding him through it.
