Shatterpoint and Labyrinth of Evil for good prequel era stuff that hasn't been mentioned so far. Shatterpoint is pretty much Heart of Darkness/ Apocalypse Now in the Star Wars universe, and Labyrinth of Evil directly leads into ROTS. It actually makes Grievous a threat, and shows Anakin and Obi-Wan behaving as, you know, good friends.
A lot of the Dark Horse comics are worth reading. The X-Wing Rogue Squadron comics, Star Wars Tales (a bunch of stories that were at the time both canon and non), Dark Times (one of my personal favorites), the KOTOR comics (another favorite), Empire and it's followup Rebellion.
