SotE was actually a full media project designed as a test run for the hypothetical prequels at the time. They produced everything you would produce for a full length features film (video game, comics, OST, novelization, toys, everything except an actual movie. Then they analyzed the sales data.
The reason it feels like main canon, non-EU, Star Wars is because it was. It's so convincing, you can basically picture how the movie would have gone in your head. I also respect that it had the balls to create new characters instead of piggyback entirely off of what was already safe.
You could probably make it one day in a few years with CGI actors for the original cast considering how brief their appearances are, but they'd fuck it up inevitably.

Shadows is the basically the best EU Star Wars thing. The character names are on point, new ships are fit well. It's nestled in a nice spot in the timeline and doesn't feel shoehorned in.

Play the game in part to let the OST sink under your skin. Then read the comics. It's not that I don't like the novel (I own it), but the biggest strength of the whole project imo is the classic-era quality tier character, costume, and "set" design. It LOOKS like a Star Wars movie would have looked if it came out between 1980 and 1983, which is when these falls chronologically. The point is try to combine sound and visuals because they did everything a movie has except the movie itself.

It takes place in the middle of the OT and ties it together in ways that make sense and don't conflict with anything else,and all of the new characters introduced are dead or "dead". It's the closest thing to canon in the entire EU, for whatever it's worth. I don't think it will even need to be addressed on way or another.
The only Shadows of the Empire stuff I have consumed was the pc game. I didn't even get to finish it. The AT-ST and Boba Fett boss fights always rekt my 7-year old self. Now I can't even finish that shit since my disc got rekt as well.

No there are some of the songs in the game, for sure. The speeder bike chase song is one, I think, and I know the badass Imperial Palace and creepy Imperial Sewers song are in there.
The Boba Fett/Gall level uses the Boba Fett theme from Empire, though. Still such an awesome tune to this day and I'll never forget running around those cliffs fighting brown cliff-wampas and jetpacking from peak to peak.
