It's been years since I've read it, but I'm pretty sure that Shadows of the Empire detailed Luke building his new lightsaber from plans belonging to Obi-Wan as he was hiding out in his hut and training alone. The crystal was I think synthetic, so the color really just came out of the chemical makeup or structure of the crystal. That's really pretty much it.

It was definitely originally yellow (which is why ALL Empire related merch had Luke with a yellow one), and contrary to belief Lucas didn't start tinkering with the trilogy in 1997; he did it much sooner. It was an early re-tooling that turned it blue. I remember seeing it on VHS where it was then an extremely light blue lightsaber (almost white-looking) in both New Hope and Empire.

People who argue about canon are people who don't understand how canon works.
Its more complex than I'm going to get into here but with star wars as an example, think of it as the movies are canon to its derivitives (the EU, cartoons ect) but the films aren't canon to the derivatives and the derivatives aren't necessarily canon to each-other. therefore you can have multiple canons, so one could be Episode 2->2D Clone Wars->Episode 3 and another Episode 2-> 3D Clone Wars -> Episode 3, or simply Episode 2-> Episode 3, or if your really want some EU prequel speculation->Original trilogy.
There is no Ultimate Canon, the word non canon makes no sense, the EU just doesn't belong to the same canon as the Disney stuff

in a deleted scene from the movie, it shows him adjusting stuff for his new lightsaber. since it was supposed to be blue (but they changed it to green in post because you wouldn't be able to see it well in that location). after they realized the saber was green, they removed the "lightsaber building" scene because they no longer needed to exlain that it was supposed to be an entire NEW (but also blue) lightsaber (cuz it was green now).
