Why do filmmakers forget that Ramses grew up with Moses and would have been the same age as him?

He is always portrayed as a guy in his late 20's-early 30's at best while Moses is in his 60's

Generally Moses is depicted with a big beard and long hair and Pharaoahs are usually depicted as having no hair at all. So I think that's part of it.

I don't know what age Moses was when the shit went down in Egypt (if you believe it happened at all), but I also think many of his old man depictions come from his older days when the Israelites had to wander the desert for 40 years

Well first the idea that Ramses grew up with Moses and was pharaoh at the time of the plagues is extra-biblical. He was never mentioned in the bible, nor were any of the pharaohs by name. Moses tends to be portrayed as older because of all the time he spent away from Egypt before returning. And then of course later there's the post-Exodus stuff.

the reason the Pharoah of Exodus is associated with Ramesses is because they mention the city of Ramesses, which was named as such during/after Ramesses reign - so they assume the events took place then. Of course the text could have probably called it that for familiarity as it was probably either written or revised to reflect the contemporary naming conventions of the time. I know there's another example of the same kind of thing happening in the Pentateuch.
