Because it takes 8 months min to make an episode and get it on air. Don't know all the details, but this is something they've said in the commentaries since they've been making them. It's not like South Park where they can get them out in a month or so.

It's kind of how the Simpsons does it.
I was too young to remember classic Simpsons as they came out, but they have been desperately clinging to relevancy in recent years by trying to make episodes based on trends and pop culture.
They've always had some amount of pop culture references, but they used to be minor plot points and asides, whereas now they dominate episodes and are painful to watch.
Watching modern Simpsons trying to be relevant is like watching your relatives at Thanksgiving try to explain memes to each other at the dinner table.
They hit on topics about 6 months after everyone stops caring about them. This has lead to episode abominations involving "Mapple Mypads", Portland hipsters, 50 shades of gray, google glass, Elon Musk, and e cigarettes. All of these are from the last 2 years. Also basically every episode has a celebrity character that comes to sprinfield for some reason.
They did an Avatar episode 22 MONTHS after it was released.
