It's actually Laurence Kasdan's fault that Midichlorians were created to explain the Force.
George has originally decided that using the Force was like Yoga, most people simply didn't have the discipline or cared enough to learn do it, but anyone can do it. Kasdan disagreed and eventually turned Lucas over to the idea that only a select few can use the Force.

I always though it would be interesting to feature a Star Wars story where the audience is meant to root for a Sith Lord to beat out a Jedi Master.
Like the Jedi Master wants to govern the Republic under the rules of the Jedi and gathers a bunch of powerful young force users to do some minority report shit with the force to detect anyone who has any inklings towards actions the Jedi would deem immoral.
Then there would be this Sith character who is aware of the plan and goes to the outer rim to fight his way into controlling the Sith so he can strike back at the Jedi Master to prevent the Republic from becoming an authoritarian state. Fast forward 30 years to ANH, and no one outside of Vader, Sheev, Yoda, and Ben know about the force, and all of them have forgotten about the midichlorian thing.

Episode 2 -Send the boy (now a 17 year old man) they secretly hate and his master on suicidal missions, that put him in the mercy of sith lords.
Episode 3 -Refuse to grant the the young man they secretly hate the rank of master, instead dress him up in sith clothing and send him to the sith lord, who they all must suspect and admit, they know hes the dark lord of the sith to be corrupted. Young man becomes corrupted and his so called master, instead of looking out for him, blames him for joining the dark side.
Episode 4 -OB 1 lies to Luke about his father, doesn't not tell him the truth of the Jedi, how they fed him to the darkside like a lamb to the dinner table.
Episode 5 -Yoda Trains Luke, yet treats him like a puppet, yes there is another, so its ok if Luke dies. Like WTF?
Episode 6 -Luke wins the light saber duel but using his anger, then manipulates Vader into picking between his son, or his master.
After his fathers death, Luke begins to see the ghosts of the past, like a madman going insane on his own events of his life.
Because every time they start to exist, George Lucas erases them from canon.

The Sith actually came from the comics and video games. When all "dark Jedi" are named "Darth", dress in black, and have red lightsabers it's natural to assume that there would be an order or club dictating all of that.
